A mix-culture fermentation in open copper vats is followed by months of aging in stainless steel. Master blenders regularly mix new matches with older ones to achieve the ideal combination of flavors and the perfect balance of sweet and sour and when the balance has reached its peak, the temperature is crashed to preserve the ideal flavor. Pouring a bright golden hue with a brilliant white head, Pale Sour drinks with a pleasant acidity and balance of a fine white wine.
